    FRIED MASHROOMS WITH SAUSAGE FROM KASTORIA

    Ingredients

    • 600 gr. mixed fresh mushrooms
    • 1/4 cup excellent virgin olive oil ALTIS / SOLON / ELANTHI
    • 3 tablespoon balsamic vinegar KALAMATA PAPADIMITRIOU
    • 1 clove garlic
    • 2 fresh onions
    • 1 sausage from Kastoria
    • 4 slices stale traditional bread
    • thyme
    • oregano
    • 2 tablespoon balsamic vinegar with fig KALAMATA PAPADIMITRIOU
    • green salad for serving
    • roasted peppers from Florina Φλωρίνης for serving

    Directions

    Heat the olive oil ALTIS and sauté the garlic for 2'. Add the sausage in slices. Then, add the mushrooms in a high heat and let them absorb their liquids. Add the salt, the pepper and the fresh onion. Stir them well and pour the balsamic vinegar KALAMATA PAPADIMITRIOU. Fry the slices of bread. Mix in a bowl some olive oil, balsamic with fig KALAMATA PAPADIMITRIOU and some thyme or oregano and spread the toasted bread with a brush. Place the slices in a plate and divide in equal parts the fried mushrooms. Serve the green salad and the roasted peppers. Sprinkle with the rest of the vinaigrette.
