GREEN ROCKET SALAD FROM PAROS
- 2 cup wild rocket leaves
- 6 cherries tomatoes
- caper leaves
- 2 colored peppers
- 2 tablespoons mint leaves
- 10 olives
- 1/3 cup virgin olive oil ALTIS / SOLON / ELANTHI
- 3 tablespoons white balsamic cream with orange and lemon KALAMATA PAPADIMITRIOU
- 1 teaspoons Greek honey «ΑΤΤΙΚΗ»
- 1 grated tomatoes
- 1 cup feta cheese «ΔΙΒΑΝΗ» in cubes
- Freshly baked bread
Slice the peppers thinly, place them in a bowl with the arugula and cherry tomatoes and add the caper leaves and olives. Whisk olive oil, honey «ΑΤΤΙΚΗ», the balsamic cream with orange and lemon KALAMATA PAPADIMITRIOU and the grated tomato.
Pour into the feta cheese slices and let them marinate. Pour over the salad and stir. Serve with the cooked omelet.
