CARAMELIZED PINEAPPLE WITH HONEY AND AEGINA PISTACHIO NUTS
- 3 tablespoons Greek honey «ΑΤΤΙΚΗ»
- 1/2 cup black sugar
- 1/2 cup orange juice
- zest of 1 orange
- 1 little mature pineapple
- 1 cup yoghurt
- 1/2 cup Aegina pistachio nuts
- mint leaves
Preheat the oven to 220° and place parchment paper on the cooking sheet.
Stir the black sugar, the orange juice, the zest and the Greek honey «ΑΤΤΙΚΗ» until the sugar is melted.
Peel the pineapple and chop it lengthwise into slices. Marinate the pineapple in a honey mixture for 15'. Place the pineapple in the cooking sheet and keep the marinade.
Bake it for 15', turn it over and baste with the marinade.
Continue cooking it until it becomes caramelized. Remove the food from the oven and pour the rest of the marinade over it.
Let it cool off totally. Serve it with yoghurt. Garnish with mint leaves and Aegina pistachio nuts.
