ORZO WITH MINCED MEAT AND CHIKPEA

Ingredients

  • 1/4 cup olive oil
  • 500 gr. minced meat
  • 1 chopped onion
  • 1 clove garlic
  • 1 grated carrot
  • 2 chopped peppers
  • 1 tablespoon tomato paste
  • 1/4 cup olive oil
  • 500 gr. thick orzo
  • 250 gr. cooked chickpea
  • 2 pinches cumin
  • 2 pinches spice
  • salt, pepper
  • strained yoghurt
  • chopped parsley

Directions

Heat up the olive oil and brown the minced meat for a few minutes. Mix until it’s dissolved. Add the onion and the garlic. Let the onion become transparent. Add the peppers and the carrot and then mix them. Rub the paste on the bottom of the pot and bake it for a few minutes. Heat up 1/4 cup of olive oil in a pan. Brown the half of the orzo until it gets darkens. Add the rest of the orzo, mix very well until it becomes oily. Place it with the other ingredients combined with the chickpea. Sprinkle with the spices. Supplement boiling water or zest and simmer for 19´-12' but remember to stir often so that it not gets stuck. Serve with yoghurt and chopped parsley.
