ZUCCHINI PIE WITH FETA CHEESE AND TRADITIONAL FILLO PASTRY

Ingredients

  • 1 kg zucchini
  • 1 cup olive oil
  • 2 dry chopped onions
  • 1 fresh chopped onion
  • 2 grinded carrots
  • 1 bunch anise
  • 1 bunch parsley
  • 1 bunch mint
  • salt and pepper
  • 500 gr. smashed feta cheese
  • 4 eggs
  • 3 spoons of semolina
  • 6 filo pastry “politiko”

Directions

Grate the zucchinis with coarse grater. Preheat the oil and sauté both dry and fresh onions. Add the zucchinis and the carrots. Be sure that they are dry. Remove from heat. Sprinkle with the spices and the semolina. Then add salt and pepper. Let it cool off and then add the eggs and the feta cheese. Mix them. In a pan spread evenly 3 “filo pastry”. Sprinkle with the rest oil and continue with the rest of the fila. Add the mixture and turn over the edges of the sheets (filo pastry). Bake it for 40´ in 170° C until the stuffing is steady and the sheets turns brown.
