KOULOURA FROM GALAXIDI

Ingredients

  • 1 cup olive oil
  • zest of 2 oranges
  • 1/2 kg sugar
  • 1/4 cup cognac
  • 1 cup fresh orange juice
  • 2 teaspoons baking soda
  • 1 teaspoon nutmeg
  • 1/2 tea spoon clove
  • 2 teaspoons cinnamon
  • 1 teaspoon anise
  • 1 kg flour
  • 3 teaspoons of sesame
  • cinnamon and sugar

Directions

Preheat the oven in 170°C.Butter a pan. Add in a bowl the olive oil, the orange zests, the spices, the sugar, the cognac and stir them well until the sugar melts. Dissolve the baking soda into the juice and add them to the mix. Stir them and add the flour. Do not add all the flour. Knead gently until the flour is not visible. The pastry must be soft and oily. Spread it in the pan. Sprinkle the sesame and bake approximately for 1 hour. Wait until it cools off and cut the” Kouloura” in pieces. Sprinkle with cinnamon and sugar.
