PASTA SALAD WITH PENNE

Ingredients

  • 500 gr. pasta
  • 4 tablespoons virgin oil Altis soft / traditional
  • 2 chopped colored peppers
  • 1 chopped tomato without the seeds
  • 4 fresh chopped onions
  • chopped olives
  • capers
  • 2 tablespoons parsley
  • 2 tablespoons mint
  • salt, pepper

FOR THE SAUCE:

  • 1/4 cup white vinegar
  • 2 tablespoons mustard
  • 2 tablespoons mayonnaise
  • 1 tablespoon ketchup
  • 1 teaspoon sugar
  • 1/3 cup virgin olive oil Altis soft / traditional

Directions

Boil the penne in salted water for 10’. Drain the penne, rinse them with cool water and put them in a deep salad bowl. Sprinkle them with olive oil so that they do not get stuck together. Add the rest of the ingredients: the peppers, the tomato, the capers, the olive oil, the fresh onions and the spices. Add salt and pepper and mix them very well. We add all the ingredients for the sauce in a bowl and mix them with a rubber scraper very well until the sauce thickens. Pour it over the salad and blend them so well so that the pasta is mixed with the dressings. Serve the salad at a room temperature.
